• Harim Jayeon Sillok (Natural & Organic) Antibiotic-Free IFF Dakbong (Chicken Drumstick) 1kg, Water, 1 tbsp Cheongju (Korean rice wine), 1 tsp Ginger, 1 Onion, 2 Potatoes, 1/2 Carrot, 5 Thai Chili Peppers, 1 Dried Chili Pepper, 1 Leek, 1/4 Cucumber, Sesame Oil, Toasted Sesame Seeds, 100g Flat Rice Noodles
• Sauce Ingredients: 500ml Water, 5 tbsp Soy Sauce, 2 tbsp Mirin (Sweet Rice Wine), 2 tbsp Noduyu (Korean Soy Bean Paste), 2 tbsp Oyster Sauce, 1 tbsp Cheongju (Korean Rice Wine), 2.5 tbsp Sugar, 2 tbsp Corn Syrup, 2 tbsp Minced Garlic, 1 tsp Ginger Juice

Instructions:

1. Soak the flat rice noodles in water before cooking.

2. Mix all the sauce ingredients together to make the braised chicken sauce.

3. Blanch the chicken drumsticks in boiling water with Cheongju (Korean rice wine) and ginger to remove excess fat.

4. Cut the potatoes, carrots, and onions into large pieces.

5. Add the sauce to a pot and boil the chicken drumsticks for 5 minutes. Then, add the vegetables and continue to boil for another 15 minutes.

6. Finally, add sesame oil, toasted sesame seeds, leeks, and cucumbers to the pot and simmer. Add the soaked flat rice noodles and finish cooking.

Dakgaseumsal Haem Cham Mu Ssam Mari (Chicken Breast Ham Cham Mu Wrap)

‘Dakgaseumsal Haem Cham Mu Ssam Mari’ is a simple yet unique delicacy that involves wrapping various ingredients in fresh radish slices.

4. Blanch the spring onions until they wilt slightly. Then, place the Cham (Chicken Breast Ham) and vegetables in the pickled radish and roll them up, securing them with the spring onions.

5. Place the radish wraps on a plate and serve with the mustard dressing.
